| Carrot Egg Poriyal |
Ingredients
| Carrot | : | 2 nos |
| Egg | : | 2 nos |
| Green Chilly | : | 4 nos (Divided) |
| Chopped Onion | : | 4 tbsp (Divided) |
| Turmeric | : | 1/4 tsp |
| Pepper | : | 1/2 tsp |
| Salt | : | to Taste |
| For Seasoning | ||
| Oil | : | 2 tsp |
| Mustard Seeds | : | 1/2 tsp |
| Urad dal | : | 1/2 tsp |
| Curry Leaves | : | 1 brig |
Method
- Peel the skin and Shred the carrot and keep it aside.
- Break two eggs and beat it well.
- Add Turmeric, Pepper, 2 tbsp of Chopped Onion, Chopped Green chilly ( 2 nos) and Salt in the Egg mixture and mix it well.
- Heat a pan with Oil. Add mustard seeds.
- Allow them to pop then add urad dal and curry leaves.
- Add Onion, chopped Green chilly ( 2 nos) and fry it.
- Now add the Carrot. Sprinkle some water and Salt to taste.
- Cover the Pan and cook it for 3 minutes in medium heat.
- Make a well in a center of the pan once carrot is cooked add Egg Mixture and allow them to cook.
- Cook this for about 2 minutes.
- Mix the Egg well with Carrot and cook for another 1 to 2 minutes.
- Garnish it with Corraindar Leaves.
- Serve this with Sambar, Tamarind curry
