Carrot Egg Poriyal


Ingredients


Carrot   :  2 nos
Egg   :2 nos
Green Chilly   :4 nos (Divided)
Chopped Onion   :4 tbsp (Divided)
Turmeric   :1/4 tsp
Pepper   :1/2 tsp
Salt   :to Taste
For Seasoning
Oil   :2 tsp
Mustard Seeds   :1/2 tsp
Urad dal   :1/2 tsp
Curry Leaves   :1 brig


Method
  1. Peel the skin and Shred the carrot and keep it aside.
  2. Break two eggs and beat it well. 
  3. Add  Turmeric, Pepper, 2 tbsp of Chopped Onion, Chopped Green chilly ( 2 nos) and Salt in the Egg mixture and mix it well. 
  4. Heat a pan with Oil. Add mustard seeds.
  5. Allow them to pop then add urad dal and curry leaves.
  6. Add Onion, chopped Green chilly ( 2 nos) and fry it.
  7. Now add the Carrot. Sprinkle some water and Salt to taste.
  8. Cover the Pan and cook it for 3 minutes in medium heat.
  9. Make a well in a center of the pan once carrot is cooked add Egg Mixture and allow them to cook.
  10. Cook this for about 2 minutes. 
  11. Mix the Egg well with Carrot  and cook for another 1 to 2 minutes.
  12. Garnish it with Corraindar Leaves.
  13. Serve this with Sambar, Tamarind curry
Note : Limit one Egg per Carrot
